Half Term Cooking Made Easy

Half term is here and as per usual time is in short supply. As we are dashing around with our little ones here, there and everywhere, we have only a few minutes to spare and need something quick, easy and healthy to cook up for dinner.

This delicious pasta dish comes from our friends at The Claremont Road Kitchen. With some seasonal sprouting broccoli and some keep-you-going carbs, this meal makes for the perfect summery supper. And best of all, it takes just 15 minutes – we tried, timed, tested and tasted, all with excellent results!

For 2 adults and a little one:

– 4 tbsp olive oil

– 2 cloves garlic finely sliced

– 1 small red chilli chopped finely (you can vary the level according to taste and children!)

– 3 tbsp pine nuts

– 250 g sprouting broccoli

– 50 ml wine

– 250 g large pasta shells (penne also works well)

– 40 g grated parmesan

– A handful of basil

– salt & pepper

Heat the oil and add the garlic, chilli, pine nuts and broccoli.  Stir-fry for 3 minutes over a medium heat then add the wine.

In parallel, boil the pasta. Cook the broccoli mixture for a further 7-10 minutes until it is cooked but still al-dente.

Once the pasta is cooked, stir it into the sauce and add the cheese.  Allow to sit for a minute before serving, sprinkling with basil.
